The important thing to remember is to make sure that your stitches are tight and close enough together that the stuffing won’t show. Be sure that you do not over stuff the toy because that will stretch your stitches and the filling will show through.
A neat trick to preventing the filling from showing through or falling out is to use pantyhose in a color that closely matches the yarn you use. fill the hose with filling and stuff it inside the penguin before sealing it. Be sure to tie a knot in the open end. You do not need a whole leg or a large stocking, just enough to fill the penguin without overstuffing.
