This blog post has a pattern for a hat inspired by an old Anthropologie hat. It includes two different finishes.

Although I’ve only created this to fit my head it would be easy to adapt the pattern for smaller heads (going down a hook size) or larger heads (either by using a larger hook or by having one/two more rows of increases before starting on the sides of the hat).

There are links to the flowers I’ve used to finish the hats, though you could use your preferred flower pattern to finish, or a bow, or nothing at all!

It takes less than a skein of 100g DK wool, I would think you’d probably get 3 hats out of 100g, but I’ve not tried. I didn’t start with fresh balls of yarn and I still have some left from each one.
