Byrdo is a knit toy. Gauge is not too important, but you do need a tight fabric so the stuffing does not show through. You may want to go up one needle size, or take frequent breaks, because knitting this tightly is tedious.

Byrdo is knit from the bottom up on double-pointed needles. Wings, tail, feet, and beak are all knitted separately and then added once the body is knitted. The legs are I-cords knitted on double-pointed needles with pipe cleaners inside them.
