This is a great entry into cable knitting, as you work some type of cable stitch on every right side row, which makes it easier to keep track of where you are in the pattern, Works with any Aran or Heavy Worsted yarn. Alpaca or Merino would be good, soft choices. The cowl shown in the photo used all but a few yards of the Highlander, so if you want to make it longer, you’ll need more than 145 yards (133 meters).

Note that the original was knit entirely with size 8 needles, and the photos show quite a flare in the seed stitch sections in the first and last few rows. Using the smaller needle for this section will minimize the flare.
