At my employer’s community service day last year, I improvised this design for the shelter cats they had on site for adoption. There’s a little sewn fabric semicircle inside with catnip, and the body is basically a circle folded in half, with a long tail for extra fun. Someone there said it looked like an empanada, so that’s where it got the name.
