The average gauge using worsted weight and size 8 knitting needles will work for this pattern. There is no set gauge, so if you knit tight and they come out smaller than expected, maybe give them to a child.
Other types of yarn can be used, but allow for adjustments to come out to the size you want.
The ribbing can be made longer for a longer cuff, just seam the extra length so that there is still a thumb opening at the proper location. Maybe start with the top seam and then allow for the thumb space, then seam the rest of the cuff.
