Ferratella stitch
Ferratelle are a kind of cookies typical of my Region and are always present in our homes. In the different parts of Abruzzo, they are known as ferratelle, neole, cancelle or pizzelle and they are enjoyed crispy or soft, filled or simple. However you eat them, Abruzzese Ferratelle are delicious! To cook them we need to use a traditional iron passed into the family from mother to daughter, from generation to generation.

If you want to try to cook them this is the recipe:
FERRATELLE ABRUZZESI (about 35 cookies)
3 eggs
6 tbsp sugar
6 tbsp vegetable oil (or light olive oil)
the zest of 1 organic lemon
300 gr all purpous flour
Method
Put the eggs, the sugar, the oil and the lemon zest in a bowl and mix with a hand whisk until blended. Fold in the flour and set aside.
Heat the typical iron on your medium size burner, on medium-low heat for about 10 minutes. Lightly brush the inside of the iron with some cooking oil and put a tsp of the batter in the center. Close iron and cook for about 30 seconds per side, or until lightly golden. Remove ferratella with a fork.
Put the ferratelle on a wooden surface to cool and then preserve in a cookie tin.
Note
The iron must be greased only once, before you start making the first ferratella.
Traditionally, women would time the cooking of the ferratelle by saying 1 Holy Mary, flipping the iron and saying 1 Our Father. I count about 30 seconds per side
Ferratelle are often filled with grape jam, or with a mix of honey and nuts during the Christmas Season.
