What is not to love about the old market village of Hay- on-Wye? Home to gift shops, boutiques, cheerful pubs, and haberdashery to die for, not to mention mile upon mile of bookshelves, stacked high with used books.

Hay-on-Wye is also home Shepherds ice cream. Made from sheep’s milk, Shepherds is the richest and most delicious ice cream I’ve ever tasted. In fact, when I visit Hay-on-Wye I make time for ice cream twice. Once upon arrival, and again before I leave town. It’s that good.

A book of knitting patterns inspired by my favorite places in Wales would not be complete without a knitted love poem to my favorite ice cream in the world. This is it.

Cuffs are worked in a honeycomb slip stitch pattern, from edge to edge, using two different balls of yarn. Worked in Noro Silk Garden, the mitts will never be identical twins, but you can control the colours somewhat, as I did, by gently pulling yarn out of the ball before knitting, and choosing where in the colour pattern of the yarn to begin each mitt.

Alternatively, you can embrace the surprise factor of Noro yarn, and knit from opposite ends of one ball, or from balls in two different colourways, and let the colours fall where they may.
