My Slouchie Beret is knitted on two needles, and just has one seam to sew up. The enjoyable bit of knitting it is decreasing as you come to the top.

I have decorated mine with cherries. The instructions for these are not included in the pattern, but I refer you to several really good free cherry patterns available on Ravelry. A flower, or tassels and pompoms might also work well.
