I actually had started a shawl that turned out to be not wide enough. So I bound off., sewed the ends together and turned it into a cowl! Voila! Problem solved. This is as easy as you want to make it, just knit the entire thing or use some fancy stitches if you wish. I give you basic guidelines and a few simple rules and you run with it. Have fun!
