The weight and type of yarn and size of needles used will determine the size of the resulting lambie.
Using Bernat Baby Coordinates (which is lovely for these, with a crinkly and shiny look), mine come out approximately 4” tall.
No, your eyes don’t deceive you, that is a monkey and a pig in 3 of the lower photos. This pattern was used for them as well, with very slight modifications.
This is an intermediate pattern, using a single color, double knitting technique (described here), knitting in the round, and a special cast on technique for the ears.
It’s quite easy when you know the techniques, and quick to knit up, with no seams, and knit all in one piece.
