About the extra stitch:
a rather handy device for concealing the end-of-row jog is diagonal (or close-to-diagonal) lines in the pattern. If you cast on an extra stitch, the jog will occur along a right-slanting diagonal rather than along a vertical line and will be significantly less obvious. See the very last image (the chart): the red part of the chart is shifted one stitch to the right and one stitch up in relation to the black part.
For a left-slanting shift, cast one stitch fewer than required.
