Based on EZ’s Very Warm Hat. Modifications: fewer stitches around edge to snug in and prevent drafts around ears while not causing dire hat-head, earflaps, my own experimental crown shaping, stripes, and purl ridges for texture. Using outer-layer stripes of reflective yarn for safety (my winter coat is black) and the rest wool/silk/cashmere for warmth.

Pattern is trial-and-error, quick notes for my own reference may not make much sense, may not be accurate.

First photo shows it with a different cast-on point with a different technique for the turning edge and earflaps, but I frogged that part later and redid it as below.
Using MC, JMCO 72 sts, place end-of-round marker and join, knit 1 round, work inc round: m1 after every 6th st to get 84 sts. Place crown decrease markers at 6/12/12/12/12/12/6 sts.

Outer only: * Purl 1 round, knit 4 rounds, switch to CC1 (black) knit 5 rounds, purl 1 round, knit 4 rounds, switch to MC (birch), knit 5 rounds, rep from *

Crown decreases begin after about 4.75”, maintaining stripe-and-ridge pattern: k2tog-slm-ssk at each of 6 points (dec 12 sts per round) every 4th round 4 times until stitch count reaches 36, 2 rounds even, then on the next (3rd) round (24 sts), 1 rounds even, then on the next (2rd) round (12 sts) - 12 sts remain, cinch closed. Weave in end, and all stripe ends.

Begin working from other edge of prov cast on (72sts), place end-of-round marker: Knit 2 rounds, placing markers for earflaps and dividing sts as follows (starting from end-of-round): 3/18/30/18/3. Knit 1 more round, stopping after last marker, 3 sts before end-of-round. Purl 3, slip m, p3, drop MC.

Earflaps:
*With CC1 (black) knit 18, shadow-wrap and turn; p17, shadow-wrap and turn. work these 18 sts as short rows as for a short-row sock heel, turning 1 st before previous sts on each subsequent row, and follow stripping pattern as for outer layer (purl ridge, switching colours), until 8 sts on each side have been worked as shadow-wraps. Work back in increasing short-rows, using MC (birch) and no stripes or ridges, working 1 more st on each edge until all shadow-wraps have been worked. Slip earflap marker, purl 30, drop MC, rep from*.

Complete turning edge: k3, slip m.
Next round: Knit to 3 sts before end-of round, p3 sl m.
Next round: P3, k18, p30, k18, k last 3 sts.

Liner hat: knit 6 rounds. Work inc round: m1 every 6 sts (84sts). Place crown decrease markers at 6/12/12/12/12/12/6 sts.

Switch to CC2 (tapenade), work to about 4.25” from turning edge, work crown decreases.
