One cable motif minus the fencepost is 1.25”.
The back of the neck is 7”. It might be a good idea to make it a little smaller. This is general advice for V-necked cable sweaters. But maybe not.
5 motifs feels about right. That would be a total width of 7.75 inches. If the neck is 7”, then the motifs will need another .375, or about 2 stitches. not much, then.

After I did one sleeve, I thought it was way too narrow. I did the second sleeve where I did decreases every 5 rows for a couple of inches, then switch to every 7 rows. And then I had to re-do the first sleeve.
